My wife gave me a wine making experience - never heard of it before, but I am making 30 bottles of Amarone from RJ Spagnols concentrate. The shop used oak chips in a plastic bucket instead of an oak barrel and added a handful of raisins instead of crushing raisenated grapes. The shopkeep says the wine will be ready to drink in about a year. I like Amarone, but it's too expensive for my everday wine. If you have made or tasted wine from concentrate, did you like it? I am a wine buyer and on a recent in depth tour/barrel tasting, a winemaker showed me a collection of products they use that concerned me a bit. The "collection" was a countertop in the lab full of powdered tannins meant to enhance the wines in various ways. I have been a huge fan of these folks wine for some time now but I feel uncomfortable about the idea of using a synthetic (?) additive to flavor the wine. It seems like most winemakers are hush hush on this subject if they use the powders at all. Are these powders controversial? It seems to me that if you aren't able to get the flavors from the barrel aging processes, then you shouldn't just add powdered american oak barrel tannins to your wine to make it taste as if you're a master. Although the wine was delicious, I left feeling lied to and cheated. ALSO, what is the deal with megapurple? Are winemakers using this grape outside of large output commercial type wines? How can you find out if a winemaker is using either one of these products? more

Resolved Question: how to restore color on old stained oak whisky barrel?

I have an old oak wine/whisky barrel and it is very dark, almost black. when I take one of the pieces of oak out I can clearly see that the surface is very dark, the inside is a beutiful oak color, and the inside is charred (as it should be.) I tried sanding and it didnt work. is there a bleach, a toner, or any kind of product or method that would lighten the color a bit? thanks. more

Well I just made my first batch of wine at home. It's still in the 1 gallon container and I was going to pour it straight into a bottle but my friend told me I should put it into an oak barrel and let it age for a few months. He said it also gives it flavor. So I looked around the internet but only found really expensive 1 gallon barrels. I only plan on spending like $30-$50 on a 1 gallon barrel and everywhere I search they're like $80-$100. So... my question is does anyone know where I can buy good oak barrels fore less than $50. Bourbon wisky and wine cost about the same. You can get a cheap bottle of bourbon for about 9 or 10 dollars or you can get an expensive one for a hundred or more dollars. The same is for wine. On average you pay about $15 or $20 for both. Wine is usually about 3 to 4 years old. Bourbon Wisky is at least 6 years old. The brand I buy is aged 7 years. Wine is just fermented and stored in a barrel. Bourbon Wisky is fermented, distilled (concentrated) then stored in a NEW chared oak barrel. Once used, bourbon barrels are either turned into charcoal or sold to the UK for making scotch which is ironicly more expensive than the bourbon that came out of the barrel first. There is about 4 times as much drink in a liter bottle of wisky as there is in the same size bottle of wine. Is it the grapes? Are grapes that much more expensive than grain?You know, the reason you use water in wisky is because you dry the grain first. I've been wondering about making "fresh" wisky with corn that is fresh instead of dried. more

It may just be my imagination, yet when I taste certain wines, especially from Italy and France, they have a certain taste/aroma to them which is similar to the smell of very old castles, wine cellars and structures in those countries. I certainly can flavor the oak barrels the wine was aged in, however, can the surrounding atmosphere also affect the flavor of the wine? With some wines this sensation is very strong to me, and I am reminded of the castles and medieval structures I have visited. It is much like how I associate a perfume with a certain person, when I smell it independently of that person, I am reminded of him/her. more

okay here we go about 20 years ago i was working on a furnace in a old barn, i saw a glass jug and asked if i might have it, the customer was glad to get rid of it, this glass jug is just like the old oak barrels that were used to cure wine or whiskey except that it looks like they took hot glass and poured it over the barrel, i mean there are bolt marks in it, and on the bottom there are worm lines, that etched themselves in the wood, id gladly send anybody a pic if they think they can help idnetify it and give me an idea of a price....ive tried several antique dealers and they have no idea of what or who made it more

Traditional round sided barrels are difficult to make, but I once saw a website with a very good method for making one from wooden plank using a box shape with kerfed ends. I would really like to find good instructions for this again. Any ideas? more
